Rich Tomato Soup

  • Serving for 4 persons
  • 1 table spoon butter or olive oil
  • 2 garlic cloves crushed
  • 5 soft sun dried tomatoes in oil, roughly chopped
  • 3 x 400 grams cans plum tomatoes
  • 500 ml vegetable stock
  • 1 tea spoon sugar, or more to taste
  • 142 ml pot soured cream
  1. Hit the butter or olive oil in a large pan, then add the garlic and soften for a few minutes over a low heat.
  2. Add the sun dried tomatoes, canned tomatoes, stock, sugar and seasoning, then bring to a shimmer.
  3. Let the soup bubbles for 10 minutes until the tomatoes have broken down a little.
  4. Whizz with a stick blender, adding half the pot of soured cream as you go. Taste and adjust the seasoning.
  5. Serve in bowl with one table spoon of pesto (optional) and a little more soured cream if you like. :)
