Rustic Tart With Apples

Cake:

  • 1 1/4 glass of flour
  • 2 spoons of sugar
  • pinch of salt
  • 125g cold butter cut in small pieces
  • 3 spoons of iced cold water

Filling:

  • 4 big apples (sliced)
  • 6 spoons of sugar
  • 1/3 teaspoon of flour
  • 2 spoon of melted butter

1 egg mixed

4 spoons of apricot jam

Mix flour with sugar and salt, add butter and cut with knife until butter turns into very small pieces. Add 2 spoons of cold water, mix till cake is attached to each other. If the batter is still dry, add one more spoon of water. Mix with your hands well but fast, for a ball and cool down in the fridge for at least 1 hour.

Mix 2 spoons of sugar and 1 spoon of flour. In another bowl, mix 4 spoon of sugar, apples and cinnamon powder. After the cake has cooled down, make it flat- circle of around 32cm in diameter. Put it in a baking tray. Now sprinkle the cake with the mixture of sugar and flour (but not on the 5cm around the edges). Put the apples mixture (only where the sugar is). Pour melted butter on top.

Fold the edges of the cake inside. Spread a bit of the mixed egg on this edges and sprinkle with sugar. Bake 40-45 minutes at 200C.

Heat apricot jam in a small pan, and spread it on the top of the apples before the cake cools down. Serve hot or cold.
