Hari ni kami try satu resipi dari buku SPICE IT! Sangat senang dan cepat untuk di sediakan… lebey kurang sotong or udang celup tepung tapi ada modifikasi sikit2 dengan variasi peppers yang digunakan…Apepun, kami bertiga suka dengan rasanya
- 500gram cleaned squid tubes (saya add some king prawns jugak)
- 2 tablespoons lemon juice
- 2 garlic cloves finely chopped
- 95 gram (1/2 cup) potato flour
- 1 tablespoon sichuan peppercons, toasted and ground
- 1 tablespoon ground blackpepper
- 1 1/2 teaspoons ground whitepepper
- 1 1/2 tablespoons salt
- 1 teaspoon caster sugar
- peanut oil for deep frying
- Cut, wash and toast the squid and prawns.
- Combine the lemon juice and garlic and add the squid and prawns and toss to coat.
- Refrigerate for 1 hour.
- Drain off the marinade and discard.
- Combine the potato flour, peppers, salt and sugar and set aside. Fill a deep fryer saucepan 1/3 full with the oil and heat to 180C.
- Coat the seafood in the flour mixture. Pressing lightly into it to help adhere.
- Deep fry the seafood pieces in batches until lightly golden and curled.
- Drain well on paper towel and serve with lemon wedges or chilli sauce
