We had Finnish Baked Pancake atau Penkek Bakar dengan blueberry jam untuk breakfast hari ni.

Nak buat penkek ni mudah saja, 10 min to prepare dan the rest 20 min or so di dalam oven.

You’ll be happy to have your breakfast ready as easy as that :)

Hari ni Mikael bangun dan ucap ‘Morning’ pada semua orang. Owh, another new word. Well done sayang, very well done!

Selepas lambai dan ucap bye-bye pada mama dan daddy, dia terus ke dapur. Dah lapar agaknye.

Mujurlah pancake pun cepat saja siap :)

Untuk makan tengahari, saya rebus makaroni dan buat ayam bakar rosemary.

Tomato pula saya bakar sekejap, dalam 15 minit at 200 C. Cantik kan tomato tu. Cute-cute je.

Pancake ni saya bakar dua kali hari ni. Masa pagi buat separuh adunan saja, rupanya tak cukup.

Mikael suka pancake ni. Orang makan pancake dengan jem, dia pula makan jem dengan pancake. Banyak sungguh jem nye dalam pinggan dia. hehe.

Petang Faiz kata ‘Kita buat untuk makan petang pula boleh tak?’… :)

Resipi Pancake Bakar

  • 500 ml susu
  • 2 biji telur
  • 1 cawan tepung gandum
  • 1/4 cawan butter cair atau olive oil
  • 2 sb gula
  • secubit garam
  • 1/2 sk perasa vanilla
  • sedikit gula untuk topping sebelum bakar
  1. Panaskan oven kepada suhu 225 C.
  2. Campurkan semua bahan kecuali gula untuk topping di dalam mangkuk besar. Dengan menggunakan pemukul telur biasa atau senduk kayu, kacau sekejap sahaja (lebih kurang 1 min macam tu), sehingga sebati. Pastikan tepung tidak berketul.
  3. Tuang adunan ke dalam dulang pembakar bersaiz lebih kurang 33 cm x 30 cm yang dilapik dengan baking paper. Pastikan adunan tidak terlalu tebal.
  4. Taburkan sedikit gula di atas adunan sebagai topping. Jika suka, boleh juga taburkan buah-buahan seperti frozen berries sebagai tambahan.
  5. Bakar selama 20-30 minit.
  6. Siap! boleh dimakan dengan jem atau madu.

Finnish Baked Pancake

  • 500 ml milk
  • 2 eggs
  • 1 cup normal flour
  • 1/4 cup melted butter or olive oil
  • 2 tbsp sugar
  • A pinch of salt
  • 1/2 tsp vanilla essence or powder
  • Some sugar to sprinkle
  1. Pre-heat oven to 200-225 C.
  2. Using wooden spoon or egg whisker, quickly mix everything in a bowl (except the sugar to sprinkle) until well combined (about 1 min or so).
  3. Pour the mixture into a baking dish with baking paper. I used 33 x 30 cm size. Make sure it is not too thick.
  4. Sprinkle some sugar on the surface. You can also add some fresh or frozen fruits (such as raspberries or blueberries).
  5. Bake for about 20-30 min.
  6. Serve with honey or any kind of jams.

    I’ve tried to make your pancakes and they really turned out horrible. There is something wrong with this recipe. Too many eggs, not enough flour. They turned out looking ugly and tasting like scrambled eggs.

    • I’m sorry to hear that the taste is not to your liking. This is a Finnish baked type of pancake, where the texture is very very different from typical ones. It is supposed to be soft and creamy. For your information, I have been using this recipe for over a year, fortunately without any problem so far. In fact, it has become one of our favorites.

      I could not imagine how it turned out tasting like a scrambled eggs as it should be baked in the oven. I really don’t know then what went wrong :( but if you maybe have mixed them too long before baking, try to reduce the time. The pancake needs just a quick whisk to combine all ingredients, something like 1 min or so.

      I’m so sorry again for any inconveniences.
