I was working from home whole last week as Mikael was having his winter holidays. He loved staying at home though sometimes he kept mentioning some of his friend’s names. Again and again.

Maybe he was missing the playtimes :D

Baked finnish pancake is something I always love to make for breakfast.

This time, I added some frozen raspberries for topping. Pretty good for my taste ;)

Dear friends, have a great week ahead! :)

Finnish Baked Pancake

500 ml milk
2 eggs
1 cup normal flour
1/4 cup melted butter or olive oil
2 tbsp sugar
A pinch of salt
1/2 tsp vanilla essence or powder
Topping: some fresh or frozen raspberry and some sugar

Pre-heat oven to 200-225 C.
Using wooden spoon or egg whisker, quickly mix everything in a bowl (except the raspberries and sugar for topping) until well combined (about 1 min).
Pour the mixture into a baking dish lined with parchment paper. I used 33 x 30 cm size. Make sure it is not too thick.
Sprinkle some raspberry and sugar on top.
Bake for about 20-30 min or until brown.
Serve with honey or any kind of jams.

Note: The mixture is very watery and the ready pancake will be a bit doughy. May i remind you that this Finnish type of pancake is VERY different from the typical pancake. But we like it very much. Hope you will too :)

      Sama-sama. Saya harap akak tak bersedih lagi. Mungkin berkat doa semua, keputusan tahun depan akan lebih baik dari tahun ini. Harap2 pelajar2 pun belajar bersungguh sungguh untuk peperiksaan yang akan menentukan masa depan mereka.

  13. How pretty… I absolutely ladore the pictures, once again! I love how every ‘culture’ has its own sorta pancake. Dutch/American/ French/ Finnish; we all love pancakes but they are all totally different. I never tried finnish pancaked before but I’m pretty sure that’s gonna change in the nearby future. Love!

    I’m in the process of making this and it says 500ml. To 1 cup of flour. Is this a typo? This is very watery. I’m in the process of baking it. Not sure if this will even cook.

      It is supposed to be like that, the mixture is very watery and the ready pancake will be a bit doughy. May i remind you that this Finnish type of pancake is VERY different from the typical pancake. But we like it very much. Hope you will too :)

    Finnish pancake is a traditional in our area. Actually the ingredients are similar to my grandmother’s Norwegian pancakes. I can’t wake to make these – fresh and fruity!

    You got very nice dishes here especially the pancake. Every one here is appreciating you for such a wonderful work. I don’t like raspberry but I think in these delicious recipes it will be fun having some raspberry. With the colorful decoration with raspberry made the dishes more attracting.
